University of Toronto research finds surprising effects among adults who added extra dairy to their diets
A new University of Toronto study is challenging decades of dietary caution around whole-fat dairy, offering fresh evidence that cheese, milk and yogurt lovers may not need to feel guilty after all. For years, dairy fans have been told to reach for the low-fat version or skip it altogether, but this latest research suggests that advice may be overdue for a rethink.
The Study Behind the Dairy Debate
Researchers followed 74 overweight or obese adults for 12 weeks, splitting them into three groups: one following a low-dairy, calorie-restricted diet, one eating three daily servings of full-fat dairy without cutting calories, and one eating the same amount of dairy under an unrestricted diet. All participants followed Canada’s food guide and were supplied with full-fat dairy products throughout the trial, removing much of the guesswork around what people actually ate. The results were published in The Journal of Nutrition, adding to a growing body of research questioning long-held assumptions about saturated fat.
What Researchers Found
By the end of the study, there were no meaningful differences in weight gain, body composition or cholesterol levels between the low-dairy group and those consuming three servings of whole-fat dairy daily. Notably, the dairy-eating participants did not show adverse blood lipid levels or signs of insulin resistance, and they also had lower blood pressure than expected. Those who ate more dairy also had higher intakes of calcium, protein and vitamin D, nutrients many adults struggle to get enough of regardless of age or diet. For a food group so often treated with suspicion, the outcome was strikingly unremarkable in all the ways that matter most for long-term health.
Why Full-Fat Dairy May Not Be the Enemy
For years, health guidelines have steered people toward low-fat or fat-free dairy, largely because of the saturated fat content in whole-fat versions and its long-assumed link to heart disease. But nutrition professor Harvey Anderson, of the university’s Faculty of Medicine, says the broader body of human research tells a more complicated story. Numerous studies, he notes, have failed to connect full-fat dairy consumption with negative health outcomes, and some research, including work led by fellow University of Toronto professor Kozeta Milliku, has pointed to potential protective effects tied to regular dairy intake. That disconnect between assumption and evidence, Anderson suggests, is exactly why nutrition science keeps evolving.
The Matrix Behind the Milk
Anderson and his colleagues believe the so-called dairy matrix hypothesis may help explain the gap between saturated fat concerns and the more neutral or even beneficial outcomes observed in real-world studies. The theory holds that the physical structure of dairy, not just its individual nutrients, shapes how the body absorbs and responds to it. Dairy’s two primary proteins, casein and whey, are bound together with fat and other nutrients, creating a structure that leads to a slower, steadier release of nutrients into the body. That complexity, Anderson suggests, means dairy’s health effects can’t be judged simply by adding up its individual parts, the way a nutrition label might imply.
What It Means for Older Adults
The findings may carry particular weight for older adults, who often have lower overall energy needs and can struggle to get enough protein and key nutrients through diet alone. Anderson points out that dairy remains a familiar, nutrient-dense option for this group, one that appears to deliver benefits without raising the risk of diabetes or other chronic conditions. In a population where appetite and nutrient absorption often decline with age, that combination of familiarity and density could matter more than it gets credit for.
The study, partly funded through Canada’s Agricultural Partnership AgriScience Program, adds to a growing argument among nutrition scientists: that evaluating whole foods, rather than isolating single nutrients like saturated fat, may offer a clearer picture of what actually helps or harms our health. For dairy fans anxiously eyeing the cheese board, that’s a welcome shift in the conversation, and maybe, finally, permission to stop overthinking the cheese plate.
